If you're into the science of low-carbohydrate eating, and haven't already done so, you may want to pick up a copy of A. Simmonds' Principia Ketogenica: Low Carbohydrate And Ketogenic Diets - Compendium Of Science Literature On The Benefits. The Kindle version linked to here is currently selling for 99 cents. I'm not sure how long it will be available at that price. It's a fantastic deal -- over 300 pages of hardcore nutrition science for less than a buck! (Update: the price has gone up, but … [Read more...]
A real person eating (mostly) real food
One day, in a fit of flexibility, I changed the tag-line of my blog from whatever it used to be to "a real person eating (mostly) real food." I feel I ought to explain -- to define my terms, or at least try to. First, what do I mean by a "real person"? I mean me, of course, good ol' Jim Anderson -- as ordinary a guy as you will ever meet, with an ordinary name, the son of a factory-working man and a home-making woman. A guy born in a city whose name denotes a hard, sharp, slivered rock -- the … [Read more...]
My low-carb week in review: April 5 – April 11, 2015
In dieting, as in most areas of life, averages can be deceptive. Take my daily averages of calories and net carbs consumed for last week -- 1, 831 and 39 grams respectively. And 72% of calories from fat. Not bad, not bad at all. Those averages imply a low-cal, low-carb consistency over the seven days, a steely resolve to eat the right way every day. Like I said, averages can be deceptive. On Thursday, I ate a single meal at Applebee's that ballooned my day's calories to almost 2, 600. My net … [Read more...]
Just your basic low-carb blueberry pancake
People eating low-carb, high-fat usually learn pretty quickly about wheat flour substitutes. At least they do if they have a hankering for foods like pancakes and waffles. To be honest, I'm happy eating eggs for breakfast most mornings, with or without bacon or sausage on the side. But a change of pace only enhances the pleasure you take from the usual, customary fare. So occasionally I make pancakes. My basic recipe mixes almond flour/meal and coconut flour, at a ratio of three parts to one … [Read more...]
My low-carb week in review: March 29 – April 4, 2015
As I predicted, my weight loss hit a plateau this week. I dropped a whopping two-tenths of a pound, going from 224.8 pounds a week ago to 224.6 pounds today. Oh well. I attribute my stall to the X-factor. I don't know what the X-factor is, which is why I call it the X-factor. According to my data, I ate significantly fewer calories per day for this last period than the one before. Percentage of calories from fat was about the same. I have no reason to think my record-keeping was any less … [Read more...]
Chowing down low-carb style at Red Robin
I try to be a food-snob, I really do, but it seldom works for long. Despite years of education, and my wife's best attempts to refine me, I remain a regular guy with regular guy tastes -- such as, for instance, the Bacon Cheeseburger at our local Red Robin. (For the record, I get nothing from that restaurant chain except the food I pay for.) Red Robin calls this a "Gourmet" burger. I'm not sure what criteria a gourmet burger has to meet, or even if I care. It's a good sandwich -- a hefty … [Read more...]
No-filler salmon patties in coconut oil
Since salmon is a carb-free food, it should be easy to create a low-carb salmon patty, right? Just leave out other ingredients that would add carbohydrates. Easy-peasy. That's how I figured it in 2011 when I wrote one of the most popular posts on this blog: "No-filler salmon patties." The recipe presented in that post is about as simple as they get. It calls for a can of salmon, an egg, and two tablespoons of olive oil. Maybe some garlic powder. My new version is just as easy. I'm changing … [Read more...]
My low-carb week in review: March 22-28, 2015
I lost 3.6 pounds this week. (Correction! I only lost 2.4 pounds for the week, going from 227.2 to 224.8. I had the wrong number in mind for the previous week. I apparently was looking back two weeks. JA, 4-26-15.) I'm happy about the drop, of course, but wary. Was that all fat, or was some of it water? Based on my past experience, I mistrust any weight loss greater than two pounds per week. It's likely to be followed by a week of little or no weight loss. But, then, 3.6 pounds lost this week, … [Read more...]
Sardines: low-carb, high-fat lunch in a tin
A tin of sardines makes a quick, easy, nutritious and portable low-carb lunch or snack. It's another food item that I seldom, or never, ate before going low-carb, a hard-to-explain list that includes salmon, almonds, macadamia nuts, and fresh avocado. Lately, I've been buying Season Brand Sardines in five-tin packs at Costco. (For the record, I receive no consideration from either of those companies, but may from Amazon.com, which sells several brands of sardines, including the Season Skinless … [Read more...]
My low-carb week in review: March 8-14, 2015
The table here shows my average daily intake of fat, carbs, and protein for the week of March 8 to March 14, 2015. This was the first full week of my low-carb reboot. Not that I ever stopped eating a reduced carbohydrate diet in general, but I 'd gotten a bit lax and allowed some "carb creep." I was probably eating excessive protein, too. As a result, my weight loss that began in 2011 had stopped and then reversed itself. I'd gone from a low of 207 pounds in early 2012 back up to 232 pounds. … [Read more...]
